Well, what do ice cream, nuts, fried chicken, salmon, avocados and doughnuts
have in common?
They all have fat.
Well, I guess then if we want to be healthy, we should keep away from those
foods, right?
Well, some of them, yes.
You see, nutritionists have discovered that there are two kinds of fat.
There's bad fat and good fat.
And if we want to be healthy, we need to include some of those good fats into
our diet.
Which leads us to the question: Which fats are good and which fats are bad?
Glad you asked. Let's find out as we begin today's lesson on page 22.
Fat Facts.
Choose "good" fats for a healthier diet.
For years dieters have thought the key to weight loss is a low-fat diet, but
modern research shows this simply isn't the case.
There are "good" fats and "bad" fats, and it's important to keep a moderate
amount of "good" fats in your diet.
Healthy fats are essential to your overall well-being.
They promote good heart health as well as a strong immune system, and they are
necessary for the absorption of some types of vitamins.
So how do you know which fats are good and which are bad?
A rule of thumb is that good fats are liquid at room temperature, and bad fats
are solid.

My name is Ryan.
Friends, we love to talk about ways to stay healthy here at Studio Classroom.
And today we are going to give you a couple tips on how you, too, can stay as
healthy as possible.
That's right.
Today we are looking at Fat Facts, facts about fatty food.
Now we're talking about choosing "good" fats for a healthier diet.
OK. Now here we see the word "good" in quotations.
And we're going to explain to you what this concept is between good fats and bad
fats.
That's right.
And we're talking about our diet today.
That does not mean you are only eating certain foods.
Your diet always refers to the food that you are eating.
So even if you just eat normal foods, normal foods would be your diet then.
Just to keep that straight as we're talking about dieting versus having a diet.
Exactly.
Your diet is the food that you are eating, no matter what it is.
If you are on a diet, that means you are making sure not to eat certain kinds of
food.
That's right.
Now for years dieters have thought the key to weight loss is a low-fat diet.
So first we need to know what a dieter is.
And that is a person who is usually trying to lose weight and to be healthier.
And therefore, they change what they are eating to be very specific foods.
OK. And they thought that the key to weight loss is low-fat diet.
Now the word "key" here means the most important part.
That's right.
And so a low-fat diet is what they went for.
That means they try to limit how much fat they ate.
But modern research shows this simply isn't the case.
OK. Now Kaylah, this is something I used to think.
I thought: Well, if I want to lose fat, then I need to eat less fat.
But now we see that isn't the case.
That's right.
To have a case, that means the truth that isn't what is going on in this
situation.
And that's true, research shows that that is not how you lose weight.
How do we lose weight, Ryan?
OK, friends. Well, this might come as a surprise to you.
There are actually "good" fats.
Of course, there are also "bad" fats.
That's right.
So "good" fats and "bad" fats, we have quotation marks here.
Now "good" meaning things that you do need, and "bad" meaning things we don't
want.
But because we know that there are some good, that means we do need some sort of
fat in our diet.
That's right.
That's kind of surprising here.
It's actually important to keep a moderate amount of good fats in your diet.
That's right.
So you need to be aware of how much fat you're putting in and making sure you're
getting the good kinds of fat.
OK. At least a moderate amount, or a decent or good amount of good fats.
That's right. "Moderate" means you are only eating some, though.
Well, healthy fats are essential to your overall well-being.
OK. Now we see, of course, these fats are healthy, and they're essential.
That means they're very important.
They are needed, and they needed for your overall well-being.
First, Kaylah, let's start with overall.
"Overall" means in general or including.
So your... in general your health, your whole health is what we're talking
about.
And then your well-being would be what?
OK. Your "well-being" is referring to whether you feel good and healthy and
happy.
That's right.
So are you good and healthy overall?
Well, I hope so.
They promote - this being the researchers - are promoting these good fats for
us.
So these good fats, what are they doing for us?
OK.
These fats can promote good heart health as well as a strong immune system, and
they are necessary for the absorption of some types of vitamins.
Now your immune system is how you stay healthy, and you do need vitamins to be
absorbed.
Now you may be taking vitamins, and that's great.
But they're not good for you unless your body can use absorption to bring them
in.
Exactly.
And I like how you used that phrase, bring them in, Kaylah.
The word "absorption" means to take something into something else.
And so maybe a sponge, something you use to clean up water, would absorb or uses
absorption to hold water.
So our question is now we know we have good and bad, so how do you know which
fats are good and which are bad?
OK. Now we've got a very good question here.
We have a rule of thumb to tell you.
And that is that good fats are liquid at room temperature, and bad fats are
solid.
Now that is a great rule of thumb to know.
And that is we need to have fats that are at room temperature.
Now room temperature refers to what is comfortable in your room to be sitting
in.
So if this fat is a liquid when it's just sitting in the room with no heat or
cold added, that would be considered a good fat.
OK. So that is how you can tell whether or not they are good fats.

complicated.
